Smashing Bellinis made with two different kinds of extra dry proseccos. We used it instead of Champagne along with fresh peeled and mixed peaches, all stirred together into a fresh cocktail when we had some friends over who wanted to see the little one.
The purpose of using prosecco is the natural sweetness among the sparkling bubbles. When you add Champagne, which is the standard use, you also need to put some sugar cane to give it that perfect taste of nature's nectar. But if you use the ones we did, the nectar taste is already there. Salut!
