The exotic coconut is a persistent friend in our home. I tend to eat it raw. It's the perfect snack to keep fresh in the refrigerator, but even better is to use it in a smoothie. To open it, I usually drop it gently on our stone floor in the kitchen. It can look brutal, but that's how the gambian maid taught me and my sister to do it with the fresh coconuts outside our room in Gambia when we where there for a longer vacation. The mission is to create a crack but not to break it completely.
I then pour the rich and creamy coconut milk into the mixer, add a banana or two, some fresh orange juice, raspberries and then small pieces of the fresh coconut. Be sure to mix it for a while, but the result is mindblowing and takes you far away to the tropical parts of our beautiful world where the sun is beaming like a red fireball and the sand is warm and heated.
